Ruby Z. Ernsting, age 87, of rural LeSueur died on Thursday, February 15, 2018 at the Mayo Health System Hospital in Mankato. She was born on December 15, 1930 near Madison Lake to Thomas and Elizabeth (Boldt) Chambers. Her parents died when Ruby was a youth and she moved to rural Henderson to live with her sister, Lillian Tiegs. Ruby married Cecil Ernsting on April 26, 1950 at Zion United Church of Christ in LeSueur. She worked for many years at the LeSueur Clinic as custodian and later worked seasonally for Green Giant and the Seneca seed house in LeSueur, house cleaning, babysitting and working for Kentucky Fried Chicken of St. Peter. She volunteered her time at Zion Church, the Ladies Guild and also the LeSueur Food Shelf.
She is survived by her husband, Cecil.
Children; Dennis (sp. friend, Tara) of Madison Lake, Bruce (Lisa) of Olympia, WA,
Scott (sp. friend, Laurel) of LeSueur, Jane (Darrin) Buck of LeSueur, Tim of Kasota and Tom (Colleen) of Winthrop. 16 Grandchildren and 12 Great-grandchildren.
She is preceded in death by a daughter, Elizabeth; brothers, Harry, Joe, Percy and Ernie Chambers and sisters, Mabel Kotasek and Lillian Tiegs.
Funeral services will be held on Wednesday, February 21, 2018 at 11 a.m. at Zion United Church of Christ in LeSueur. Visitation will be 2 hours prior to the service. Interment will be in the Mound Cemetery in LeSueur.
